Whole Wheat Banana Waffles
High in protein, these crispy waffles have a nice texture and pleasant flavour – you would never know they are also good for you.
Makes 9-10 waffles
Ingredients:
3/4 cup (175 ml) whole wheat flour
3/4 cup (175 ml) unbleached flour
1/2 cup (125 ml) old-fashioned oats
1 teaspoon (5 ml) baking powder
1 teaspoon (5 ml) baking soda
1 tablespoon (15 ml) light brown sugar
1/2 teaspoon (2 ml) salt
2 eggs, lightly beaten
1 cup (250 ml) lowfat milk
1 teaspoon (5 ml) vanilla extract
1/2 cup (125 ml) unsalted butter, melted
1 six-ounce (170 g) container lowfat vanilla yogurt
1 banana, cut into 1 inch (2.5 cm) pieces
1/2 cup (125 ml) pecans or walnuts, finely chopped (optional)
Instructions:
Place whole wheat flour, unbleached flour, oats, baking soda and powder, brown sugar and salt in mixing bowl and stir to combine.

Place eggs, milk, vanilla, melted butter, and yogurt into blender jar. Cover blender jar. Holding cover in place, turn to medium and blend until ingredients are homogenous, about 15 seconds. Add banana and nuts if using and pulse on low about 10 times.

Whisk wet ingredients into the dry ingredients.

Cook waffles according to manufacturer’s instructions.
